you really don't. But adding some seasonings does help to add flavor to the legs. I recommend adding a can of beer to the water before boiling and a little garlic... this way the legs come out with a nice flaverful taste. With your melted butter add a little beer while melting, garlic, and a touch of parsley... enjoy.

I also sometimes like to add a bay leaf to the pot..this gives a winderful aroma.

I would use a couple of whole bay leafs, old bay spice, and a can of beer. YUMMY!
