All other wagers 19%

The percentage of the betting pool that the track takes out for win, place or show bets is 17% to 20% at most tracks. The take for the exotic bets is usually higher and can be up to 25% of the betting pool. Breakage occurs when the track rounds down the payoff on a $2.00 winning ticket to the next whole dime. The effect of the break for the horses then go to post it at lower odds or are bet place and show can be very significant adding up to 5% to the take.

The house keeps it all. The purse comes out of it if the entrance fees fall short of the mark. I'd guess that if you look at it like any other business, once the house deducts usual business expenses, it is left with a minimum of 15%...minimum!
