The name can be traced to Nordic Vikings. The word for "grill" is also used to describe the innards of the elk, which are, in turn, cooked over a grill in pocketed bread (sorta like a pita). The term has been misused since that time

When cooked at most restaurants I've ordered one at, the large flat cooking surface they are cooked on is called a grill. My mother had a snack shop in Chicago and most of the entrees were cooked on the grill: hamburger, grilled cheese, steak.
