For homemade mac & cheese stay away from ultra hard cheeses like sharp cheddar. Always melt it in a double broiler first and then pour it over the pasta. Velveeta works much better and you can put it in the microwave. Personally, I prefer the classic Kraft style, with the cheese in a pouch.

basically approximately every time I prepare dinner macaroni & cheese I upload something to it. on a similar time as the macaroni is straining, I soften butter interior the backside of the pan and fry the two rooster or tuna. at times I upload cottage cheese, garlic, or toddlers. some human beings us tomato soup as a replace of milk and phone it "purple mac & cheese," yet my grandparents have some style of purple phobia, so i do no longer make that. I additionally ought to upload greater cheese and bake a casserole interior the oven. It basically relies upon on how i'm feeling.

It may depend on the cheese your using "some don't melt" if you are using a cheap cheese or it is synthetic"plastic" it will burn rather than melt. check your label.
if it's a regular cheese and still won't melt try a water bath so as to not burn it.

If it's cheese, it'll melt.
Turn the heat up a little more and stir it so it doesn't burn. Add a little milk if it's really thick.
