Are their ships well maintained, clean, friendly, well organized? Are the pools, water slides and hot tubs clean and well maintained? How are the activities for both the adults and the kids? The food, is there alot of variety and is it good?

It really just depends on the ship that you will be going on. As with most lines, some are a little better than others. You can go here: http://cruisecritic.com/reviews/cruiseline.cfm?CruiseLineID=45 and look up reviews for the ships you are most interested in.
I think that Costa is a very nice line and is worth the money. They do keep it well maintained and the food is quite good. The only problem, I don't know that Costa is one of the best lines for families with children. They are a more adult-oriented line.
But I think you will find the reviews helpful.

Costa is an Italian cruise line and they do have nice ships. I have never been on one, but on our cruise to the caribbean last year we parked next to one and it was lovely looking.
