Theologians often talk about a hypostatic union in God. I don't understand this. And please don't use wikipedia, it didn't help me understand.

The hypostatic union is the union of the Second Person of the Trinity with the human nature to become Jesus Christ. It basically is the Incarnation, God becoming man, union of the divine with the human.

Hypostatic union, in theology, is a term used to describe the substance of God. For example, the doctrine of the Trinity explains that God is a being in which three personages share the same hypostasis (substance), and are, tus, the same being.
