i have boneless and skinless chicken breast, but dont know how to make them. to be ready by 6pm tonight for dinner? too hot for oven or stove. in a trailer it is 90 already. so any ideas, besides bbq.?

guess just puttting bbq sauce over them is the only way.
and no, no frying pan.

cut up some of your favorite veggies (or use some frozen) and put them in some aluminum foil with the chicken breasts. put some salt, pepper and some oil and vinegar (just a tablespoon or so) on them. then, put about a 1/4 cup of water in it and close the foil up like a bag. throw it on the grill and cook it for about 30 minutes. serve over rice, pasta, tortillas or eat it solo. hope you like it.
or you could nuke 'em (no foil) if you really want nuked chicken.

5-7 slices bacon
6 boneless skinless chicken breasts
seasoning salt (or use white salt)
pepper
1 (10 ounce) can cream of chicken soup (can use two cans if desired, or use cream of mushroom soup)
1/3 cup grated parmesan cheese
1 (10 ounce) can mushrooms, drained
1 small onion, finely chopped
2 teaspoons minced garlic (optional)
1-2 cup swiss cheese, cubed into small pieces (can use Velveeta and Swiss together!)



In a large skillet, cook the bacon until crisp; drain on paper towels then crumble (leave the bacon drippings in the pan).
Season the chicken breasts with salt and pepper the, brown in the bacon drippings for about 5 minutes on each side.
Place the breasts in a 4-6-quart slow cooker.
Sprinkle with mushrooms.
In the same skillet heat the soup and Parmesan cheese with onions and garlic for 5 minutes until bubbly, then pour over the chicken and mushrooms.
Cover and cook on LOW setting for about 4 hours.
After about 4 hours sprinkle with the cheese cubes and bacon.
Cover and cook on HIGH for about 20 minutes, or until the cheese is melted.

Without using the oven, stove, or BBQ grill, there are only two other options. A crock pot recipe (but you won't have the chicken cooked by 6); or, do you have a pressure cooker? Still, you'd have to turn on the stove under the pressure cooker. I don't think a recipe will help you if you can't use a stove or oven.

What about a wok? It is high heat for a very short time..a chicken stir-fry is the quickest way to cook boneless skinless chicken breast

heat one tablespoon oil, add diced, or sliced chicken, cook for about a minute, add garlic now so it doesn't stick cook until no pink is visible.. (about 5 minutes) add any vegetables that you like (slice thin) so that it cooks quickly..cook for about 2 minutes or until veggies are tender. Add soya sauce and heat for about 1-2 minutes and serve with noodles or rice.

Go to the store and buy some of that quick 30 min marinade sauce thing...they sell it everywhere (Wall-mart, Target, Albertsons etc.) what ever flavor you want and ta-da you got dinner...

All you need to do is pour some marinade in a bowl with the chicken let it set for 30 min or more in the refrigerator

and of course take it our and cook it in a skillet

And you can serve that with ... mashed potatoes or vegetables or a salad what ever else you want.

You could cook them in the microwave with a cup of water, so they stay moist. Check them every few minutes. then you can shred the chicken and put it on a salad of fresh veggies. No stove, no oven, no bbq.

Microwave Chicken Marsala

INGREDIENTS:
1 medium onion, halved, thinly sliced
1/4 teaspoon dried leaf thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup Marsala wine
2 tablespoons butter, cut in small pieces
6 boneless chicken breast halves, skin removed
fresh basil, chopped, for garnish

PREPARATION:
Combine the onion, thyme, salt, pepper, Marsala, and butter in a microwavable dish large enough to hold the chicken breasts without crowding. Microwave, uncovered, on HIGH for 5 minutes, or until the onion is tender.

Add the chicken and microwave, uncovered, on HIGH for 12 minutes, or until the chicken breasts are no longer pink in the centers but are still moist.

Transfer the chicken to a platter and set aside in a warm place.

Return the dish to the microwave and continue to cook, uncovered, on HIGH for 5 minutes, or until the onion is very soft and the liquid is reduced. Spoon juices over the chicken, garnish with the basil, and serve hot, with hot cooked pasta or rice.

For the rice you can pick up that 90 second microwave rice Uncle Ben's at the store.

Microwave Broccoli-stuffed Chicken Breasts Recipe

1 (10 ounce) package frozen chopped broccoli, cooked
2 green onions, minced
4 ounces monterey jack cheese, shredded
6 boneless skinless chicken breast halves (2 1/4 lbs total)
3 ounces cooked ham, 3 slices, cut into halves
1 cup soft breadcrumbs
1 tablespoon parsley, minced
1/2 teaspoon paprika
3 tablespoons butter or margarine, melted
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup milk

Drain broccoli well; combine with green onions and 1/2 cup cheese in a large bowl and mix.

Pound each chicken breast half to 1/4-inch thickness, and top each with a piece of ham and 1/6 of broccoli mixture.

Fold chicken in half over filling; tuck thinner ends under (use toothpicks to hold in filling if necessary).

Mix bread crumbs, parsley, and paprika.

Brush about a tablespoon of melted butter over chicken, and coat with seasoned crumbs.

In a 13"x9" baking dish, cook chicken, covered loosely with waxed paper, on High 10 to 12 minutes (until fork tender) (High heat on my microwave is 800 watts.).

Let stand, covered, while preparing sauce.

In a 1-quart bowl, stir together remaining 2 tbsp butter, flour, salt, and pepper.

Stir in milk gradually; cook on High 3 1/2 minutes or until boiling, stirring twice.

Add remaining cheese, whisking until melted; serve with chicken.

a jar of sauce put in a crock pot throw in the chicken raw put a lid on it and let it cook it will come out great!! Trust me!! but you have to let it cook long so it may not be done in time!! But if you cut up the chicken into small pieces it will cook faster good luck!!

Do you have an electric skillet? Fry them in that. It's about the only other option you have without using the stove, oven, or grilling.

yes since i am a chef i think i could answer that for you a toaster is very quick, and does not heat up your kitchen like a oven or stove top, try marinating your poultry, and place in small slide in pan that comes with toaster oven, follow manufacturers info, and many good eats

I know you mentioned it would be too hot to use the stove.But unless you want to use the microwave.The stovetop will be the best alternative.
Its hard to give you a recipe not knowing what you have in your pantry to work with.Email me back and tell me what spices you have and we can come up with something yummy
