2/3 C Worcestershire sauce
2/3 C of soy sauce
1 tsp. of black pepper
1 tsp. garlic powder
1 tsp. onion powder

Options
1 tsp. liquid smoke
2-3 tsp. Tabasco Sauce
2-3 tsp. crushed red peppers
2-3 tsp. sesame seeds






The recipe above is enough for about 3 pounds of meat, which will dehydrate down to about 16-18 ounces (Yow! Now you know why it's so expensive to buy Beef Jerky.)

While beef is what most people are familiar with, just about any firm meat can be made into jerky. If there are any hunters in your family, try venison. Turkey breast or firm fish such as salmon or ahi tuna also make excellent snacks. Simply slice your choice of meat thin (usually 1/8") with the grain (see photos). This is a bit more tricky with fish, so I highly recommend frezing it halfway first. Freezing will make slicing all meats easier.

As for beef, my personal cut of choice is London Broil, although many people like to use brisket or flank steak as well.

Note: You can also use ground meats for jerky in which case you can forego the marinade and use a dry spice rub instead, see the instructions below.

INGREDIENTS:
1 pound eye of round
1/4 cup soy sauce
1/2 teaspoon ground black pepper
1 teaspoon brown sugar
1 teaspoon hot pepper sauce

DIRECTIONS:
In a medium bowl, combine the soy sauce, ground black pepper and brown sugar to taste. Mix well and add the steak slices. Place entire mixture with meat into a sealed plastic container and refrigerate for 12 to 24 hours.
In the oven, place one oven rack on the highest rack setting and one rack on the lowest setting. Place a piece of aluminum foil OR a baking sheet on the lowest rack, to catch any drippings.
Preheat oven to 160 degrees F (70 degrees C).
Insert a wooden toothpick through the end of each slice of meat, and suspend each slice from the top rack in the oven, using the toothpick as a support for the slice.
Bake at 160 degrees F (70 degrees C) with the oven door propped open to allow moisture to escape. Bake for 6 to 8 hours depending on thickness of slices. Jerky should bend, and not snap.

Go to the store get some steak, when you get home marinate the steak for about 3-4 hourse depending on how much flavor you want, then cut the steak into strips, and put strips in a dehydrator. It might take hours, it all depends on what type of dehydrator you have. It takes me about three hours to dehydrate the jerky.

Well you have to roll your meat out very thin and use a special kind of seasoning. Use a dehydrator. Beef jerky is formed.

marrinage some sort of cheap meat for a while. Then get yourself a dehydrated and dehydrate the marinated meat. Very simple if you ask me.
