Perhaps those galaxies are empty of any life, and He is in the process of creating life there. Have you ever heard the expression "to clean a room you must first make a mess" (pull everything out, clean behind and under it, and organize it). Perhaps He is not creating new planets with life, but merely using those galaxies as toys. Perhaps He is not involved with those galaxies, but is allowing the stars to die and crash into each other and make new stars all by themselves. It's not hurting anyone (as far as we know).

The crashing together of two galaxies, two stars, two planets, two people, or two atoms does not prove or disprove the existance of God.

God never promised that this universe would last forever. In fact there will be an "end time."
