WHEN i WAS IN CULINARY SCHOOL I got the impression that the tall one is the french traditional/ more formal hat ( I believe it is called the "toke")... we wore the white ones and the executive chef wore one with colored band around the bottom....
once I graduated I bought the chef boy-r-dee hat.... I am kinda like that though.... less formal...
