We do not say p b u h we actually read and say it as Peace Be upon Him. And we do mean it. The reason that it is often written as pbuh on websites such as this is just for speed any Muslim reading it will understand it and say peace be upon him.
Just because its written that way does not mean that we do not mean it.

Peace and Blessings Be Upon Him And His Household. May Allah SWT bring to you peace and blessings as well. For Allah is the Most Merciful, The Most Gracious.
It's kind of like, May god bless you. I am a Christian revert to Islam. The way I explain it is that is is basicly saying May God Bless You. Every prophet that Allah SWT sent to us was a gift. So may this gift from Allah SWT have peace and blessings in Paradise and Heaven.

Nobody says pbuh. It is only used in writing.It is an acronym.But when saying it verbally the full term is used.

its because of respect
when we read pbuh , we read it full.
its because to shorten the writings, we use abbreviation .
and there are lots of examples of this. not just in islam , but in every way of life.
