To answer a related question you didn't ask, people use the term "man" or "boy" because once upon a time, only males did these jobs and even though females have been doing them for quite some time now, the name has stuck, although there is tendency to push for the use of "politically correct" (UGH!!!!) non-gender terms such as police officer, firefighter, etc.

To answer your question, why, in the case of "substance"-man, e.g. milk, paper, fire, etc. isn't an "intervening verb" used, e.g. delivery, extinguishing, etc., because the "intervening verb" was obvious and its inclusion would have made the term unwieldy.

well my dog thinks hes a chewtoy..instead of saying.. ATTACK BOY...i just say...DUKE..PAPERBOY!..just kidding my paperboy drives a car could be a lady for all i know i think they run about 4am maybe i'll go out and check someday...i can see it now standing in my driveway at 4 am screaming..
