Top Hat Pizza

Serves 1

If you always thought pizza wasn't a nutritious food, think again. This one has a delicious combination of vitamin-packed peppers, low-fat cheese, and whole-wheat bread. It's great for a quick snack, lunch, or supper.

Ingredients

1 7-to 7-1/2-inch round piece whole-wheat pita or pocket bread
3 tablespoons prepared pizza sauce
1/4 green or red bell pepper
1/4 small onion
1/8 teaspoon dried Italian herb seasoning
1/2 ounce part-skim mozzarella cheese (2 tablespoons grated)
1/2 teaspoon grated Parmesan cheese

Equipment

Cutting board
Small, sharp knife
Chef's knife
Grater and bowl (optional)
Kitchen scissors
Cookie sheet or baking sheet
Oven mitts
Wire cooling rack
Measuring spoons
Small spatula or spoon
Pizza cutter (optional)

Instructions

1. Peel and chop onion (see Cook's Note). Measure out 2 teaspoons and set aside. (Save the rest to use in another recipe.)

2. Rinse bell pepper and place on cutting board. Remove seeds and white pith from inside the pepper. With small, sharp knife, chop bell pepper. Measure out 1 tablespoon and set aside. (Save the rest to use in another recipe.)

3. Grate cheese if it is not pre-shredded (see Cook's Note)

4. Preheat oven to 400 degrees F.

5. Using kitchen scissors cut out a circle from top layer of the pita bread, leaving 1 inch of top all around to form an edge or border. Same cut-out circle.

6. Place bottom of pita on cookie sheet or baking sheet. Using oven mitts, put on middle rack in hot oven. Bake 5 minutes.

7. With oven mitts, carefully remove from oven and place pan on wire cooling rack. Cool slightly.

8. Place cooled pita on cutting board. Using small spatula or spoon, spread pizza sauce evenly on top and also under the edge of the pita bread. Sprinkle bell pepper, onion, Italian seasoning, and mozzarella cheese evenly on top of sauce. Top with reserved circle of pita bead to form a "hat."

9. Return completed pizza to cookie sheet or baking sheet. Bake in hot oven for 8 to 9 minutes.

10. With oven mitts, carefully remove pan from oven to cooling rack.

11. Sprinkle with Parmesan cheese and let stand a few minutes.

12. Place pizza on cutting board. Cut in half with kitchen scissors, small knife, or pizza cutter. Serve hot.

Almost any veggie or fruit would be good and be part of any meal. Specials- broccoli, greens, cantaloupe, mandarin oranges, and almost any fruit juice. Salmon, sardines, and tuna are the best protein basics. Salmon patties made with either soda crackers or pre-fab mashed potatoes (from a box). Tuna salad on whole wheat bread, or a tuna casserole- that can be just noodles with tuna put in. Sardines on crackers. All the fish is canned, so can be always on hand. There are huge numbers of recipes available by search engine.

Trail Bars with Chocolate Chips or Raisins


These bars make a nice addition to lunchbox or backpack. They're made with chocolate chips or raisins, nuts, wheat germ, oats, and other ingredients.
INGREDIENTS:

*1/3 cup butter
*1/2 cup light brown sugar, packed
*1/2 cup quick oats
*1/3 cup all-purpose flour
*1/3 cup whole wheat flour
*2 tablespoons toasted wheat germ
*2 eggs, beaten
*1/4 cup light brown sugar, packed
*1/2 cup blanched slivered almonds
*1/4 cup flaked coconut
*1/4 to cup semisweet chocolate chips (or raisins)

PREPARATION:
In a mixing bowl, beat butter with 1/2 cup brown sugar until light and fluffy. Stir in oats, flours, and wheat germ. Press mixture into a buttered 9-inch square baking pan. Bake at 350° for 10 minutes.

Stir together the eggs and 1/4 cup brown sugar; stir in almonds, coconut, and chocolate chips or raisins then spread evenly over the baked layer. Bake at 350° for 20 minutes, or until browned. Score bars while still warm.
Makes about 24 bars.

Tater Tot casserole is a big hit with my kids.
You need:
bag of tater tots
1lb of hamburger meat, browned & drained
can of mixed vegetables,drained
shredded cheese
bag of dry brown gravy mix
salt

Brown your meat and drain off fat. Spread the meat at the bottom of a casserole dish. Spread the drained can of vegetable over the meat. Sprinkle the brown gravy mix over the whole thing. Then put lots of shredded cheese over that. Then lay the tots over it...laying them in rolls touching till the top of the casserole dish is covered with one layer of tots. Sprinkle salt over it and then place in a cold oven. Turn oven on 375 and cook till the top is brown. Guaranteed that your kids will devour it.........

Santa fa casserole! it's corn chips,chop meat,and chives.it really good!first layer some meat and put a layer of corn chips repeat.
put in the oven for about an half hour if still cold put back in for a half hour.hope you like it!i'm 9 and the recipe is so easy my mom makes it all the time!

I think that eggs are good in the morning with a side of turkey bacon and ham. Always include a glass of orange Juice...high in pulp (more calcuim)

For lunch give them a sandwich

For dinner, a big plate of spaggetti and meatballs. Make sre they eat alot of low fat stuff.
for dessert give them canned peaches.

Bush's baked beans and cut up beef franks!

My boys love it and the beans are high in fiber, protein, vitamins and minerals. The hot dogs are just fun to 'fish' for! And all you have to do is open a can and heat it up!

Any kind of pasta (wholegrain is best for them), pesto, sliced baby tomatoes, sliced scallions, a squeeze of tomato puree, anything else you fancy... chicken, peppers, ham etc. Mix all up together.
I've never met a child who doesn't dig this!

What I found out that my kids really like is like goolosh. Take some noodles, hamburger meat, corn, and a can of spegetti sause and mix all together. My kids loved it and it makes plenty. and its all healthy!
