Turkey Bacon Melt Sandwich

6 tablespoons mayonnaise
2 teaspoons adobo sauce from chipotle chile peppers in adobo sauce
8 slices whole wheat bread, toasted
1/2 pound thinly sliced deli smoked turkey breast
8 thin slices tomato
Freshly ground black pepper
8 slices crisply cooked bacon strips
8 (3/4-ounce) slices deli American cheese
4 leaf lettuce leaves

Heat broiler. Combine mayonnaise and adobo sauce in small bowl. Evenly spread on 1 side of each toast slice.

To assemble sandwiches, layer 4 slices toast, spread-side up, with 1/4 turkey and 2 slices tomato each; sprinkle with black pepper. Top each with 2 slices bacon and 2 slices cheese.

Place sandwiches onto ungreased baking sheet. Broil 5 to 6 inches from heat until cheese begins to melt (1 to 2 minutes). Top sandwiches with lettuce leaves and remaining toast slices, spread-side down.

Open-Face Turkey Sandwiches with Cheese Sauce

A turkey sandwich with cheese, melted under the broiler.

INGREDIENTS:
*4 slices of toast
*sliced of cooked turkey for 4 sandwiches
*3 tablespoons butter or margarine
*3 tablespoons all-purpose flour
*1/4 teaspoon salt, or to taste
*1/8 teaspoon pepper
*1 cup milk
*1 cup shredded mild Cheddar or American cheese

PREPARATION:
Arrange toast in shallow baking dish; top with turkey slices. In a saucepan, melt butter over medium-low heat; stir in flour, salt and pepper. Add milk gradually and cook until thickened, stirring constantly.

Add cheese and cook until melted and smooth. Pour sauce over turkey; place pan under broiler; broil until browned.
Makes 4 turkey sandwiches with cheese sauce.

2 medium onions, sliced
4 tablespoons butter or margarine, divided
4 tablespoons barbecue sauce
8 slices sourdough bread
8 slices monterey jack cheese
8 slices Canadian bacon
8 slices cooked turkey
dill pickle slices


In a large skillet, saute onions in 1 tablespoon of butter until tender; remove and set aside.
Spread barbecue sauce on four slices of bread.
Layer each with one slice of cheese, 2 slices of Canadian bacon and turkey, pickles, onions, and top of with another slice of cheese.
Cover with remaining slices of bread.
In the same skillet over medium-low heat, melt remaining butter as needed.
Cook sandwiches on both sides until golden brown and cheese is melted.
