Country Mushroom Soup
1/4 cup butter or margarine
1/4 cup all purpose flour
2 cups chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
1 or 2 bay leaves
2/3 cup finely chopped celery
1/4 cup finely chopped onion
3 Tbsp. cooking oil
4 to 5 cups sliced fresh mushrooms (about one pound)
2/3 cup half & half
In a 2 quart saucepan, melt butter. Stir in flour until smooth. Gradually stir in broth until smooth. Add salt,pepper,& bay leaves. Simmer uncovered for 15 minutes stirring occasionally. Meanwhile, in another saucepan saute celery and onion until tender. Add mushrooms and cook until tender in 3 Tbsp. cooking oil. Add vegetables to chicken broth mixture. Remove bay leaf and cook for another 15 minutes.(simmer) Add cream. Warm up and serve. This is very simple to make without any "weird" ingedients and is delicious!

2 cups sliced mushrooms
1 tsp chopped garlic
1 stick of butter
1/2 cup of flour
1/4 cup dry sherry wine
3 Cups chicken broth ( you can buy it canned)
1 Cup light cream
1 tsp dried tarragon
salt and pepper as needed
Method Of Prep.
In large sauce pot, melt the butter and cook the mushrooms and garlic, until the mushrooms are tender stir in the flour to make a roux and cook for 3 minutes. Add the broth and the wine, bring to a boil, add the cream and the tarragon and turn down the heat simmer for 5 minutes season with salt and pepper as needed

1 lb. mushrooms, saute in 2 T. butter in a 12" saute pan 'til brown and all juices from mushrooms have evaporated.
Remove mushrooms from pan, add 2 T. butter to pan. Once butter melts add 2 T. flour. Cook and stir about 1 minute. Slowly add 1/2 C. chicken broth, whisking like mad to avoid any lumps. Then add 1/2 t. salt, 1/2 t. pepper and 1/4 t. dried tarragon (if you have it), if not, use thyme. Then add one can of evaporated milk, again whisking like crazy. Once the milk's been stirred in, add the mushrooms back to the pan and stir 'til heated through. Enjoy the best cream of mushroom soup ever!
You could also add a bit of chopped cooked chicken and cooked rice for a meal-type soup.

Vegie con Mushrooms
Boil 5 cups of water with 2 chicken cubes, cubed carrots & sliced celery stocks for 5 minutes. Then add mushrooms and celery leaves. Bring to boil. Then add half beaten egg. Serve...
Take note: If you use dried mushrooms, better soak the a bowl of cold water for 20 minutes. The cut in desired sizes

MAGDALINAS VALENTINE CHICKEN
4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount
flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.
Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.
Drain and remove excess grease from skillet.
Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.
Simmer on medium heat till onions are soft.

clean and saute your mushrooms in butter
Add 1 Tbsp. flour and cook for 5 minutes
add milk and simmer till hot not boiling
Blend and season with salt and pepper to taste
