Heavenly Pie

Ingredients
1-1/2 cup sugar
1/4 teaspoon cream of tartar
4 eggs, separated
3 Tablespoons lemon juice
1 Tablespoon lemon rind, grated
1 pint heavy cream (2 cups)

Sift together 1 cup of the sugar with the cream of tartar. Beat the 4 egg whites until stiff, but not dry; gradually add the sugar mixture, continuing to beat until thoroughly blended. Grease a 9- or 10- inch pie plate and line with greased parchment paper or brown paper. Spread the beaten egg white in bottom of pie plate but not up the sides. Bake in slow oven of 275 degrees for 1 hour. Cool. After this torte has cooled, you can carefully remove the paper and place back in the pie plate or serving plate.

Beat the 4 egg yolks slightly and add in remaining 1/2 cup sugar, lemon juice, and rind. Cook in double boiler until very thick, approximately 8 to 10 minutes. Remove from heat and let cool. Whip the heavy cream until thick and fold in half of this cream with the cooled lemon-egg mixture. Spread this over the top of the cooled torte shell. Spread the remaining whipped cream over the entire shell. Refrigerate overnight.

Serves: 6 to 8
