I tasted Ethiopian Bread and sauce. I love it. do you have any idea how they make their bread? Their sauce is so spicy and delicious.but i hate their habit of eating raw beef meat. please let me know how to make their bread.

ENJERA (ETHIOPIAN BREAD)

Mix together: 1 1/2 c. rice flour 1/2 c. semolina flour 1/4-1/2 tsp. baking soda if weather is warm, a little more if it is cold
Add water to the consistency of thick cream. Let sit 7-8 hours. In warm weather, less time.

Let it bubble. If, when you are ready to cook, it has already bubbled and separated, pour off water and add a little warm water to make a thin batter.

Cook like a large pancake in a hot, lightly oiled covered fry pan. Enjera is done when it is set but not brown. Stack on a plate. Serve with Ziginie (meat in a hot sauce).

i'm answering not w/a recipe...but w/a "I SECOND THAT!" re: Ethiopian bread and sauce. The bread is called injera. It's kinda on the sour side, but oh so delicious w/their various sauces! I saw an article in my local newspaper about how long it takes to make it. They have to ferment the dough at least overnight so it takes on the sour properties. Sorry couldn't provide an actual recipe tho! I just go to restaurants to get my fill! YUM!

Yes, the Ethiopian Injera bread is excellent! Here is a recipe although I've never tried it but after reading your post, I'm inspired to make it.

What are you talking about, they have no food. Oh ya, they do, in sacks from airdrops, I think its wheat!
