Miniature quiche was too troublesome - don't like fitting pastry into the tiny muffin pans.

Here are my two favorite things to make in my mini muffin pans:

Pour a small amount of brownie batter into each mini muffin cup and bake as directed. Meanwhile, place store-bought cream cheese icing (whipped) in an icing bag with a large star-shaped decorating tip. As soon as you remove the pan(s) from the oven, use a mini tart shaper to press the brownie down to form a brownie cup. When the cups are cooled and removed from the pan(s), fill the brownie cups with the cream cheese icing. You can swirl the icing in, build it up from the middle, or in any fashion you can imagine. To top it off, I've tried several things: Colorful sprinkles, drizzled chocolate or a slice of strawberry -- it just depends on who or what you're making the dessert for. One Halloween I purchased black spider rings and placed the ring portion in the icing and it looked like a huge black spider was sitting on top of the brownie cup. The kids at my daughter's school loved them!

Someone else already hinted at my other favorite mini-muffin pan creation. Purchase a large pre-made chocolate chip cookie dough roll from the grocery store. Divide the roll evenly between the 24 muffin cups. I gently roll each cookie section before dropping it into the greased (sprayed) cup. Cook for approximately 10 minutes until golden brown. While the cookies are baking, unwrap 24 miniature Reese's peanut butter cups. AS SOON AS the cookies come out of the oven, press one peanut butter cup into the middle of the cookie cup. Press it down until the top of the peanut butter cup is flush with the top of the cookie cup. Continue until all 24 are complete. Let these sit until cool before removing them from the pan. Your friends and family with rave for weeks! They're terrific!!

Mini Cheesecakes.....Here's how to make them...
Preheat oven to 350 degrees
use mini liners and place a mini vanilla wafer in the bottom of the cup.

2- 8 oz packages of Philadelphia Cream Cheese (softened)
1 cup of sugar
1/2 teaspoon vanilla
2 eggs

. Beat cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add the eggs, 1 at a time, beating on low speed after each addition just until blended.
Fill evenly with batter. Bake in the oven about 20 min. or until centers are almost set. Cool. Put in the fridge for a few hours or overnight. Extras freeze well too.
Top with favorite fresh fruit or fruit pie filling or whipped cream.

Note....Cheesecakes will rise but while cooling centers will fall. This is normal.

try using the mini muffin paper liners and putting 1 scoop of chocolate chip cookie dough in each (premade works wonders) and then topping with a hersey kiss or miniature reeses peanutbutter cup pushed into the dough so it sticks out of the top. Cook until the cookie is brown :-) they are great and easy to take with you to lunch!

when i was little my mom and i used to make mini pies. just press pie crust into the tins and add a spoonful of your favorite jam, then cook until the edges of crust are golden. quick and yummy, nice kids recipe too.
