Spicy foods can boost the metabolism (enough to make one lose some weight). Some spices can control sugar levels in the blood and chili has been shown to improve immunity against the common cold.
Spicy foods make for better health - this should be a good motivator.

The best thing you could do would probably be to start cooking with a tinge more spices than normal (or preparing dishes that are spicier than she would order on her own but not too much for her to handle), or if she likes a particular type of food (ie: italian, chinese, greek), while eating out let her order whatever she wants and then order something slightly on the spicy side for yourself and get her to try it and see how she likes it. With enough time and very gentle persuasion you should be able to get her to at least enjoy spicy foods when you order/cook them, if not get her eating them on her own.

Make it less spicy.....No really-You can't. I have a low tolerance for spicy food. It burns my mouth and makes me sweat. My boyfriend loves spicy things. He does all the cooking in our house. So when a recipe asks for chili powder or something, he always adds it in at the end after I've had a serving so we can both enjoy the meal. Why do you want her to like spicy food so much? Does it really matter?

Take her on a holiday to Thailand, and introduce her to some fantastic Thai curries, whilst sunning on the beach and having fun.
Then you could head upto Northern Thailand and take some time out together to go to a cooking school and learn how to make your own fantastic Thai food.
Depends what your favourite kind of spicy food is... then take her to that country instead.
Holidays are always good for getting people to come around to trying new things.

Did it ever occur to you that she doesn't want to eat spicy food? Spicy food makes me sick for 2 days. It burns my stomach and makes me nauseous. Why would you want to do that to someone?
