My favorite vegetarian meal without a doubt is Falafel. If you don't already know what it is, it's ground chickpeas, spices and some other ingredients. This is all deep fried (I know) then put into a pita with sliced cucumber,lettuce and tomato it is served with a sesame seed sauce called tahini and a sweet but spicy hot sauce. You can buy a falafel mix in the ethnic food area in your grocery store. I have not made falafel myself because I don't think that I can meet the high standards of The Falafel Drive-in, located in San Jose, CA. It is fantastic! Grocery stores also sell something called soyizo similar to chorizo, a spicy suasage used in some mexican dishes. I like to cut up a few potatoes and fry them in some olive oil and then add the soyizo (Dont let this mixture get to dry) then spoon the soyizo and potatoes on to a tortilla and enjoy

The best ever? Buffalo wings from Kate's Joint in New York on Ave B. They are totally 100% vegan and they taste so good! Even the ranch is vegan! I know the inside is tofu with a panko/bread crumb mix, I have no idea what they use to stick it all together but it is awsome. You can find a buffalo sauce and ranch to go with it.

im not vegetarian but i am indian and a lot of indian meals are vegetarian...i really like dal (lentils) and there are a lot of different types of lentils that can be prepared in a variety of different ways so you are bound to find some type you will like...im sorry i dont exactly know how to prepare indian vegetarian dishes but you could always go to an indian food recipes website and look..

Baked Corn
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.
A Clone of Benihana's Fried Rice ( Japanese )
Yield: 4 servings
Ingredients:
4 cup cooked converted or parboiled rice (1 cup uncooked)
1 cup frozen peas, thawed
4 tablespoons finely grated carrot
2 x eggs, beaten
1/2 cup diced green onion
1 1/2 tablespoons butter
2 tablespoons soy sauce
salt
pepper
Method:
Cook rice following instructions on package (Bring 2 cups water to a boil, add rice and a dash of salt, reduce heat and simmer in covered saucepan for 20 minutes). Pour rice into a large bowl to let it cool in the refrigerator. Scramble the eggs in a small pan over medium heat. Separate the scrambled chunks of egg into small pea-size bits while cooking.
When rice has cooled to near room temperature, add peas, grated carrot, scrambled egg and diced onion to the bowl. Carefully toss all of the ingredients together. Melt 1 1/2 tablespoons of butter in a large frying pan over medium/high heat.
When butter has completely melted, dump the bowl of rice and other ingredients into the pan and add soy sauce plus a dash of salt and pepper. Cook rice for 6-8 minutes over heat, stirring often.
This fried rice can be prepared ahead of time by cooking the rice, then adding the peas, carrots and egg plus half of the soy sauce. Keep this refrigerated until you are ready to fry it in the butter. That's when you add the salt, pepper and remaining soy sauce.

scrambled tofu.
1 block of firm or extra firm tofu, drain and mash a little bit.
veggies of your choice, just make sure to chop them small.
veggies like green and red bell peppers, onions, carrots, peas, spring onion...anything!
chicken-like seasoning, it taste like chicken but there's no chicken actually.
1/8 teaspoon of turmeric powder, for that appetizing yellowish color.
canola oil.
saute all the veggies. then add the tofu (you can actually put the whole block of tofu in the pan and just mash it there. dont mash it so much, a little crumbly looking will do or whatever you prefer. ) add the chicken-like seasoning, gruond pepper and turmeric powder. mix thoroughly. cook until it is dry. (you know tofu have water in it.) garnish with fresh parsley or anything. then viola!
serve! eat! enjoy!

Hummus with warm Garlic pita or Corn tortilla.. Its SUPER Delicious.. I eat it 4 ot 5 times a week. Im addicted to Hummus! U can be creative with Hummus in sandwich, salad, Eggplant Hummus, Avacado-Paresly hummus, Garlic Hummus, Rosted red pepper hummus, black beans hummus and so on... Even it taste great with red wine or apple martini.. My kind!

My boyfriend makes these tacos that are great. He sautees TVP (textured vegetable protein) with onions and bell peppers. He uses different seasonings. With a touch of cinnamon and cumin. We eat it with a little avocado, and taco sauce, with the crunchy corn tortilla taco shells. YUM!
