There has to be a good protien food in the mix somewhere or the people you serve it to will be hungry in a few hours, so include one of the soy 'meats' or some tofu. Tofu basically kinda sucks as it is and no one seems able to make anything very good out of it. What I like to do when I have the time is drain some fresh tofu as much as possible and slice it into little chips no more than a quarter-inch thick. Get some oil going on low heat in a covered frying pan. Add a little salt and some pepper. Dump in the tofu and stir it every minute or two...don't let it stick to the pan. It takes a while...like 20-25 minutes to cook all the moisture out of it and it gets a nice chewy texture. You can add cut up veggies...onions, broccoli, peppers, whatever...after about ten minutes (so that they don't over-cook) and serve it lots of ways...over rice, with bread and a side dish or in a wrap. It makes a good, satisfying dinner.

Baked Corn

INGREDIENTS:

2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.


A Clone of Benihana's Fried Rice ( Japanese )
Yield: 4 servings

Ingredients:

4 cup cooked converted or parboiled rice (1 cup uncooked)
1 cup frozen peas, thawed
4 tablespoons finely grated carrot
2 x eggs, beaten
1/2 cup diced green onion
1 1/2 tablespoons butter
2 tablespoons soy sauce
salt
pepper

Method:
Cook rice following instructions on package (Bring 2 cups water to a boil, add rice and a dash of salt, reduce heat and simmer in covered saucepan for 20 minutes). Pour rice into a large bowl to let it cool in the refrigerator. Scramble the eggs in a small pan over medium heat. Separate the scrambled chunks of egg into small pea-size bits while cooking.

When rice has cooled to near room temperature, add peas, grated carrot, scrambled egg and diced onion to the bowl. Carefully toss all of the ingredients together. Melt 1 1/2 tablespoons of butter in a large frying pan over medium/high heat.

When butter has completely melted, dump the bowl of rice and other ingredients into the pan and add soy sauce plus a dash of salt and pepper. Cook rice for 6-8 minutes over heat, stirring often.

This fried rice can be prepared ahead of time by cooking the rice, then adding the peas, carrots and egg plus half of the soy sauce. Keep this refrigerated until you are ready to fry it in the butter. That's when you add the salt, pepper and remaining soy sauce.

I make this meal at least once a week. We all love it!

You can't really give an answer to this because no one food will be able to give you the right amounts of protein and nuitrience. You should eat a variety of things each day. Sorry, can't help much...

Whats best for me may not be the best for you. I personally LOVE creamy vegetarian lasagna. It's made with cream and wine for the sauce and yummy veggeis.

i like pasta with cheese sauce and mashrooms.
Grate cheese (2-3 kinds), heat until it melts and add sliced mushrooms, let it boil for a short while and pour on pasta.
