If you mean 11:00 AM, then I would definitely recommend a Hawaiian themed brunch spread. Go with a buffet to ease service to all your many guests and maybe have a chef's station making fresh pancakes. When I was in Hawaii, I went to an awesome brunch buffet with all kids of tropical fresh fruits, macadamia nut pancakes, banana pancakes, an omelette bar, etc...
If you mean 11:00 pm at night, I would still go with a buffet but go all out! Do a whole roasted pig, poi, huli-huli chicken skewers, pineapple fried rice, lots of grilled veggies, mock-tails made with tropical fruit juices, etc... There are tonds of Hawaiian recipe ideas online.
CONGRATULATIONS ON GETTING MARRIED - AND HAVE FUN!

Lamb.. everyone like lamb, and some kind of roast vegetable medley mith moroccan cous cous for the veggies.
Sod that woman with the allergy, just give her something different to everyone else! I'd go for salmon if you do fish, marinade salmon steaks in lime and coriander then bake it in the oven wrapen in tin foil with some butter inside too at about gas mark 4 for about 15 - 20 mins, this is sooooo delicious served with some new potatoes and a fresh salad. The juice and butter off the salmon makes a great salad dressing!

Is everyone allergic to seafood? If you have enough extra stuff, I'm sure you could sneak in one seafood dish like crab puffs or shrimp toast. But, if no seafood at all is the rule I'd go wiith small pork cube and pineapple kabobs. Bar-b-Que way in advance and keep in crock pots the day of. (Use a glaze made of pineapple juice with honey, garlic, and brandy).

I'd say do a brunch. You have 1 family member that is allergic and wont serve seafood but most likely have 95 guests that would like some wine or champagne and wont serve it?

Ham with pineapple perhaps? Salad, rolls...being that it is around that time, you will want something that isn't really heavy. Because it is just about lunch time around 11-11:30. Or maybe some hawaiian chicken. That would be really good too.

Have you considered doing chicken kabobs? Use smaller chunks of chicken, red peppers, yellow onions, corn cob slices and pineapple and grill. It's amazing! Serve it with a mango salsa cous-cous and it will be a smash hit. You could always do non-alcoholic drinks like daiquiris and mai tais.
