Please excuse my ignorance as to the Model Seven. I have never heard of it. But I have owned a Remington 700 BDL in 30-06 for nearly 30 years, and it has been an excellent hunting rifle. Have killed dozens of deer (Both Whitetail and Mulies) up to nearly 300 lbs. on the hoof and it has performed flawlessly in weather ranging from -20 to 85 and humid. Leupold 6X scope hasn't changed zero in 5 years. If the Model Seven is on a par with the 700, it is an excellent choice. Hope this helps. Good luck and good hunting.

308 is a great round,i have used a winchester mod 88 with a leapold 3-9 goldring with AO since 1966 killing deer out to 425yds with it..a shot just behind front shoulder( lungs) with a 180 grain bullet will bring down any big game animal in the USA.
also used an M14 1964-65 us army at ranges out to 500yds

Excellent choice. The .308 is a very accurate round that can be had in many bullet weights. This is what military snipers and SWAT teams use. Also, dont scrimp on the scope.

Excellent choice of firearm. I'd hunt anything from monster whitetails down with it. I'd be leery of shooting elk, moose or large bear with it.

As the prior answer said, do not scrimp on optics. A very clear case of getting what you paid for.
