I am not a vegan, but I often take taboulleh, wheat-parsley salad, to pot-luck, both because usually no one else brings taboulleh and it travel relatively well. It is a salad and should be kept cool, but is ancient, Mediterranean dish, not apt to spoil.

Noodle dishes, pasta dishes, tofu dishes, veggie dishes - these things will last, but not for long.
For vegan foods that won't perish, you are looking at dry mixes for noodles and pasta that can be made with boiling water.
Canned chillies are a good bet. As are canned chick peas, kidney beans, etc.
Soups are good - lentil, tomato, minestrone, etc.
Bring lots of snacks like nuts, dried fruits, snap peas, etc.
Yves veggie products aren't TOO bad. You can make up some sandwiches with their deli mock-meat.

I think a pasta salad--with balsamic vinagrette, olive oil, basil, tomatoes would travel well. Throw in some tofu for extra protein.
Couscous should also travel relatively well. Keep a bag of mixed nuts with you to snack on for more protein and to keep hunger at bay.

pitas and hummus
fruit in various stages of ripeness
cereal
muffins, bagels, bread with pb, jam, etc.
rasins, pretzels
beans and rice?
That's all I could think of :-/
