Saag Paneer. It is an indian dish with spinach and cheese. Absolutely rocks!

This is my favorite, everybody asks for the recipe :)

Baked Corn

INGREDIENTS:

2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

Vegetarian Lasagne

I put a whole grain wrap together by adding lettuce, sprouts, shredded carrots, and shredded cucombers. Then I sautee tofu,. mushrooms and onions together and add that to the wrap....that's my favorite thing to eat after a long day, healthy..yet filling enough. and very delicious.
Another thing I love is a sandwhich I usually order at one of my girlfriends cafe's has whole grain bread with portebella mushrooms, sprouts, nuts, tomato slice, and hummus. mmmm baby!! try it, delicious!
There are so many great vegetarian dishes, people think we're restricted... but I think the meat-eaters don't realize what they're depriving themselves of.... check out this site..

Vegetarian Pad Thai. I get it with egg, and no tofu. If you are vegan, you can get tofu, no egg. I'm not Vegetarian but I love the extra veggies they give you when you order it that way. Plus, the peanut sauce is delicious!

Most anything Thai or Indian because they are incredibly well seasoned. I ate tons of it when I was a vegetarian.
