Breakfast: turkey bacon, eggs, low carb bread (Sara Lee has a net 7 g per slice.), apples, oranges, strawberries, berries are lowest fruit in carbs, whole grain cerels (Uncle Sams cerel good) and breads. Sugarfree syrup and jelly. Whipping cream for coffee low carb.
Lunch: lunch meats that are lean, buy a couple of expensive deli meats for a treat. I like mesquite smoked turkey a slice of provalone cheese wrapped up inside and microwaved to melt cheest and eat with a green salad with low carb dressing without bread.
Any kind of meat is low carb, cheeses are low also, string cheese different flavors.
I buy the precooked grilled chicken and hamburger patties for a quick fix for my son.
Sugar free pudding and jello for desert with a little of fruit.
Ask them what they like so you aren't wasting your money on things they won't eat, they'll appreciate you wanting to help them eat right. It's really hard to go to someone's house and not eat what they are eating.
Veggies: green beans, salad, yellow squash and zucchini, are low in carbs and can be cooked fairly quickly, of course salads.
Good luck and have a great visit.

Hard boiled eggs will keep well in the fridge and will always be on hand ready to eat.
Also, a veggie tray is a good easy snack as well.
Don't forget your whole grains. They turn into sugar a lot slower in the blood stream than white breads and pastas do. Perhaps whole wheat bread, if they will eat it. Some sugar free spread or jelly. That can easily be toasted. Brown rice, you can find the instant type. They also make whole wheat bagels, but I don't know how good they are.
I enjoy making a "crustless" cheesecake. It's 2 bars of softened cream cheese, about 1 cup of whipping cream, 1TBSP vanilla, and several packets of Splenda. If you have a food processor, you can add them all at once. If not, slowly stir it all together with a handmixer. It's low carb and sugarfree. It's great with coffee. You can also use it as a dip.

Make your own trail mix - raisins, peanuts, almonds, sunflower seeds, etc. The raisins provide a bit of sugar (buffered with fiber of course) and the nuts are full of protein and lots of nutrients.
Cottage cheese, fresh vegetables that you can eat raw (cut up cucumber, baby carrots, broccoli spears - they can eat all of these with fat-free ranch dressing for a tasty snack), string cheese (all string cheese is part-skim and consequently low-fat *and* low-carb), whole grain bread...just stay away from processed food and carbs.
One thing I love to eat, which is very easy to make, is vegetarian chili. I usually find it at every grocery store - but make sure to get the low-sodium kind because it can be packed with salt. It has vegetables, soy protein and beans, which provide some carbs but a massive amount of fiber and protein as well. '
Hope I helped!

I usually have Cheerios with a little Splenda sprinkled on it for breakfast. It doesn't spike my blood glucose but it might not work for everyone. Eggs and a low-fat breakfast meat would be good (turkey bacon, etc.) for any time of day. You could get low-carb bread or wraps to use for sandwiches. Wraps are especially versatile, you can put just about anything into them (I like making quesadillas or breakfast burritos with wraps - quick and easy and yummy!).
Your best bet is to ask your parents what they would like you to provide. They should know what's good for them.

For breakfast, if they like cereal, you can get them Uncle Sam cereal. It only has 1 gram of sugar per serving, 10 grams of fiber. It's made from whole wheat with some flax seeds.
