Cover platter in leaf lettuce, pretty bright green. Then roll up your meats into little tubes and lay in a fan pattern. OR, sorta crinkle/crunch a slice up in your hand and gently lay it in the spot you want it. Keep all the beef, turkey, and ham separate. Think pizza slice-shaped areas if your platter is round. Separate meats w/ your cheeses, laid neatly in there, overlapping. Start w te edge, then work back towards center. Garnish w/ cherry tomatoes, celery sticks, purple onion slices, maybe a green onion top slit in strips and tossed into ice water.
Go to your supermarket deli or Jason's Deli or other deli and get their brochure. Stash it in the drawer for inspiration on your next deli tray!

i never really did that before but i can tell you that what makes these things flash is when you have contrast in the colors. try putting the light next to the dark and some green pepper next to the really dark or black olives next to the white

You could add pickles, olives, etc. between the meats for garnish, make it as pretty and yummy as you want.
