I think a lot of it is the price. Places where patrons are considered "guests" tend to be a bit higher priced but the service and food quality are comparable. Places where people are "guests" have more of a tendencies to bend over backwards to make sure that you are happy with your food or service. A spa I worked at, people were considered guests. We would order their food for them and bring it from the restaurant if they were having an all day treatment, we would help them buy lift tickets (it was at a ski resort) or we would even make reservations for them at other lodges and restaurants.
A customer is someone who comes in, buys their food or "stuff" and then leaves, usually expecting a minimal amount of in depth customer service. McDonalds or Applebee's would be examples of these, although obviously at differing levels of customer service expectations.

Well, in my mind a guest is someone you invite willingly into your home/business and a customer is someone who comes in and that you have to take care of whether you want to or not.

A guest is new to that place and if you were an old costumer they will give you less price!!

A guest is someone that you welcome for instance into your home, as for a customer is someone that you also welcome but they are welcomed to purchase something that you have to offer.
