There's a Mexican restuarant in my area that serves key lime pie and Marguaritas. It's an awesome combo so I'm thinking that key lime cheesecake would work just as well.

Actually champagne or a dessert wine or port - in moderation. Be wary of serving alcohol with a dairy dessert in the summer, especially if your guests have had other cocktails with dinner.

Depends on your personal tastes and the weather and even the theme of the rest of your meal... you could go strawberry (like a junior sized daiquiri or colada or even strawberry wine) or white chocolate (like white Godiva liquor in a cordial glass) or a flavored coffee... again, white chocolate or orange liquor would go nicely in a cup of coffee here.
