Betty Crocker Indian food is a good source (I swear!) It teaches you to make the 'atta' for the parantha - which you roll out flat (like a circle) and fill with the boiled potato mixture (boiled potatoes, maybe peas, some salt, pepper, and some red pepper for some zing!) then you make it into a ball - and roll out again so the mixture gets dispursed all through out - heat up a pan - put a little butter or vegetable oil (or ghee- approx 1/2 tsp-1tsp) and pan fry until both sides are golden brown.
