I am having 2 family barbecues in the next 2 weeks, one w/ my family, one w/ hubby's family. So far I have burgers and hotdogs, baked beans, chips, pasta salad, and maybe a veggie tray. I have no quick and cheap dessert ideas. Any would be appreciated. Thanks in advance.

Banana Boats
Pull back one strip of the banana peel and with a sharpe knife remove a long wedge shaped piece of banana. Stuff the wedge with miniature marsh mellows and top with chocolate chips pieces of chocolate. Replace the banana wedge and pull the banana peel back up to cover. Wrap loosely with foil and put on the barbecue ( cut side up ) for a minute or two until the marsh mellows and chocolate is melted. To serve just open the foil up ,pull the strip of banana peel off and serve with a plastic spoon. You can prepare them without the peel if you want. they are really yummy!

Smores
Take a graham cracker and top with marsh mellows and chocolate chips or pieces of chocolate and them a couple more marsh mellows and top with second graham cracker. Heat over the barbecue until marsh mellows and chocolate melt. Long handled hamburger cookers for barbecuing work really well for these.

Fruit Salad
Any simple fruit salad is always a hit at bar-b-ques. Cut up a variety of fruit and just add a little ginger ale or fruit juice. Refridgerate. It's very simple but delicious on a hot day.

I love this dessert..its easy and not very expensive...

1 box of graham crackers (any kind)
1 large box of vanilla pudding (cooked kind, but instant or
canned is OK if you have a time crunch..)
1 large carton of Cool whip thawed
1 can of already made icing (chocolate)

Prepare pudding and cool, mix with Cool Whip and set aside
take Graham crackers and put layer (you don't have to break them apart except to fix in pan. Then top with half of the cool whip mixture..layer another layer of the cool whip mixture then another layer of cracker..you can make 2 or three layers depending on the depth of your pan..(9 1/2 x 11)..then chill for about 1 hour..take your canned icing and microwave it so it is a little easier to spread..pour over the cooled dessert..refrigerate over night and serve..it is wonderful..the graham crackers are soft and the whole thing is great and will be a favorite..you can use different flavors of graham crackers, puddings, icings..and they will mix with cool whip..hope this helps..

It's called a fat-free sugar-free fruit salad, but it is so delicious. Obviously there is sugar in the fruit, but no added sugars. I love this recipe and make it for all my family potlucks now. The main change I make is not adding so many apples, but using any other fresh fruit you like. Very adaptable to personal tastes and preferences.

1 (20 ounce) can unsweetened pineapple chunks, drained
1 (15 ounce) can sliced peaches in juice, drained
1 (11 ounce) can mandarin oranges, drained
4 medium tart apples, peeled and diced
1 1/2 cups cold nonfat milk
1/3 cup orange juice concentrate
1 (1 ounce) package sugar-free instant vanilla pudding mix
3/4 cup fat free sour cream

In a large bowl combine the fruit and set aside.
In another bowl whisk milk, orange juice concentrate and pudding mix for 2 minutes or until smooth.
Add sour cream and mix well.
Fold mixture into fruit and cover and refrigerate until serving

We have lots of kids in my family and this is a favorite (though it may seem a little strange). I like it because I usually have the ingredients in my pantry.

Mix 1 stick of butter, 1 stick of margarine (Yes - one of each) and 1/2 c of sugar. Boil for 2 minutes.
Pour mixture over graham crackers layed out on cookie sheets (enough for 2 cookie sheets - break crackers in half) and bake for 10 minutes at 310 degrees. Cool them on a wire rack or they will become soggy.
I like to sprinkle slivered almonds over the crackers before the butter mixture.

easy easy dessert:

Dump Cake
1 box of cake mix (any flavor but yellow or white taste great)
2 sticks of butter or margarine
1 can of cherry pie filling (or any flavor you like)
1 20 oz can of crushed pineapple
1 9x13 baking pan

Cut butter or margarine into slices. Mix pie filling and pineapple in baking pan, dump entire dry cake mix over filling. Place butter or margarine pats over entire cake mix.

Bake at 350 for an hour or until brown and bubbly.

Let it sit for 10 minutes and serve with ice cream.

You can also add chopped walnuts on top of the butter before baking.

If you have a patriotic theme in mind, most bakeries have pre-made red-white-blue-sprinkled sugar cookies. That way you have no prep to do and it's festive. If nothing else, you can always go with cake, brownies, etc...from a pre-made mix.
