What are some of your favorite things to cook for the 4th of July and how do you cook them?

These are my favs...children love them!

Easy American flag cake

2 pints of strawberries
1 recipe of your favorite white or yellow cake (mix or from scratch, your choice)
1 1/3 C of blueberries
1 tub of whipped topping

Serves 12

Mix up and bake your favorite cake mix or recipe. Let cool.

Slice 1 cup of strawberries, set aside. Halve remaining strawberries, set aside.

Top cake (in pan) with 1 cup sliced strawberries, 1 cup blueberries and all of the whipped topping. Arrange remaining strawberry halves and blueberries on whipped topping to create a flag design. Refrigerate until ready to serve.

Makes 8-10 servings

8 sheets (about 13" x14" each) thawed frozen phyllo dough (find it in the freezer section of the supermarket)
1/4 cup melted butter or margarine
16 oz. cream cheese
1/2 cup sugar
1 tsp. vanilla extract
2 eggs
2 cups fresh blueberries, divided
1/2 cup strawberry jelly
1 cup whipped cream or non-dairy whipped topping (optional)

Preheat oven to 425°.F.

For Crust
Grease a 9" pie plate. Set aside.

On a flat surface place 1 sheet phyllo (keep remaining phyllo covered to prevent drying out), brush with melted butter. Top with another phyllo sheet, continue to make 8 layers, brushing butter between each layer. Using kitchen scissors or a sharp kinfe, cut the layers into one 12-13 inch circle. Carefully press circle into the prepared pie plate, gently fan edges. Bake until edges are just golden, about 6-8 minutes. Cool slightly on a wire rack. Reduce oven temperature to 350°F.

In a medium bowl beat cream cheese, vanilla and sugar with an electric mixer until light and fluffy. Add eggs and beat until well combined. Fold in 1 cup of the blueberries. Pour mixture into prepared crust. Bake until set, about 40-50 minutes. To prevent over browning of crust, gently cover with aluminum foil during the last 25 minutes of baking. Cool completely on a rack.

To Serve
In a small bowl, beat jelly until smooth. Spread over cheese filling. Arrange remaining blueberries on top in star shape. Garnish with whipped cream, if desired.

One side dish I like that is really simple to make is Easy Baked Beans: Combine 4 cans of Pork n' Beans, 1 Bell Pepper(chopped), 1 can of Fruit Cocktail (chopped), 1 cup brown sugar, 2 tablespoons of Ketchup, 2 tablespoons of Mustard and mix it all up really well. Place in a 9x13 baking dish and bake at 350 degrees covered with foil for 50 minutes and then uncovered for an additional 10 minutes. This dish goes well with hamburgers, hotdogs, barbeque, potato salad, etc. Enjoy!

I love to do a smoked pineapple pork roast. I used crushed pineapples, and brown sugar as a glaze. I inject it with the pinapple juice and smoke it for about 4 hours. I also love to do our spicy cheddar brawts. You take a brawt slice the skin off add cheddar crumbles and pureed jalo. no seeds and grill them like a hamburger.....mmmmmm, now I am hungry.

bbq.. like hamburgers and hotdogs, corn, salad, potato salad, and maybe like a cake from a bakery for desert.. or u can make red and blue jello with whipped cream so it looks festive hehe ..i'm throwing a 4th of july party also.. have fun!! =]

Tasty BBQ Corn on the Cob

"This is corn on the cob cooked on the grill with spices and butter. It makes for a yummy side dish to any meal! Try it with fresh garlic and onion."

INGREDIENTS:
1 teaspoon chili powder
1/8 teaspoon dried oregano
1 pinch onion powder
cayenne pepper to taste
garlic powder to taste
salt and pepper to taste
1/2 cup butter, softened
6 ears corn, husked and cleaned

DIRECTIONS:

Preheat grill for medium-high heat.

In a medium bowl, mix together the chili powder, oregano, onion powder, cayenne pepper, garlic powder, salt, and pepper. Blend in the softened butter. Apply this mixture to each ear of corn, and place each ear onto a piece of aluminum foil big enough to wrap the corn. Wrap like a burrito, and twist the ends to close.

Place wrapped corn on the preheated grill, and cook 20 to 30 minutes, until tender when poked with a fork. Turn corn occasionally during cooking.

FUNNEL CAKES

"These are Pennsylvania Dutch cakes. The batter is poured through a funnel into cooking oil and fried."

INGREDIENTS:
1 2/3 cups all-purpose flour
1/4 teaspoon salt
3/4 teaspoon baking soda
1/2 teaspoon cream of tartar
1 quart oil for frying
2 tablespoons white sugar
1 egg
1 cup milk
1/4 cup confectioners' sugar for dusting

DIRECTIONS:

In a mixing bowl, beat together egg and milk. Beat in flour, salt, baking soda, cream of tartar, and white sugar until smooth.

Heat about 1 inch cooking oil in frying pan to 375 degrees F (190 degrees C).

Pour 1/2 cup batter through funnel into oil with a circular motion to form a spiral. Fry until lightly brown; turn over to brown the other side. Cook to golden brown, and remove to drain on paper towels. Sprinkle with confectioner's sugar while still warm.

My family grills hamburgers and hot dogs but I bring along veggie burgers and Tofu Pups, which are grilled the same way, since I don't eat meat.

hamburgers, hot dogs, chicken, pork shops, corn on the cob all on the grill sides, potato salad, pasta salad, baked beans, broccoli casserole, and for desert cheesecake
