i made one last night! my b/f and i loved it:

feta, lemon & spinach pasta

Part one:
get an oven dish and crumble in lots of feta cheese. squeeze on some lemon juice and add some lemon rind. sprinkle with dried basil leaves. put in a moderate oven for about 15-20mins.

Part two:
cook and drain some fettucine pasta and add back to pot. add in some finely chopped spinach.

add the feta mix in with the pasta, add some salt and pepper, and there you have it. it was so yummy!!

It's my favorite :

Baked Corn

INGREDIENTS:

2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

This isn't vegan, but it's a great side dish. Even for meat eaters.

Hash Brown Potatoes
one 2-lb bag of frozen southern hash browns (Ore-Ida)
one small onion
one can cream of mushroom soup
16 oz sour cream
2 cups cheddar cheese

Mix together. Put in 9x13 with crushed potato chips on top. Bake in 350 oven for an hour.

A good vegetarian dish would be probably a salad with carrots, lettuce, and tomatoes in it, but im not sure about the tomatoes though.

I bake some potatoes in the oven. Meanwhile, I stir fry peppers, mushrooms with butter. Then I cut potatoes in half, add peppers, mushrooms and mozzarella cheese. Yummy!

The easiest I can think of is either a stir-fry or pasta with a chunky garden sauce.

There's alot ... fresh vegetables salads...try fresh tofu with calamansi and fresh kamote tops... mmm delecious
