I work for a vegan and she swears by this restaurant in So Cal called Native Foods. There are 2 actually, one in Newport Beach and one in Westwood. They also have a cookbook. It is really great food- I am not a vegeterian myself but have eaten there a couple of times and really enjoyed their food. They use a lot Tempeh and Seitan.

Any of the original foods that people ate before food processing (and denaturalization) are better than SAD (the standard American diet).

EG miso (watch the salt though), dolmas, tomatoe soup, various grains and of course fresh organic fruits and vegetables.

i personally like boca products, but i also like stir fry. almost any dinner that you can make with meat, you can make vegetarian. not so much leeway for vegans, but still possible. i don't know what the climate towards vegetarians is where you are, but in seattle, there are a lot of vegetarian restaurants.
