In Mexico, unripe mangoes are believed to upset your stomach. The sweet taste of a ripe mango is preferred over the sour taste of unripe mangoes.
We use unripe mangoes during Easter Week to prepare mango chutney. YUM

I love unripe mangoes. I enjoy them better than ripe...plus they make a great fruit dish or cuisin with chicken or meat.

A lot of side dishes utilize green mango
and it's also available in the royal cuisine.

Mix thick soy sauce with palm sugar, ground hot peppers, salt and some lime juice. Dip the green mango slices in it. Delicious.

We Indians eat mango when it is unripe. Usually it is sliced and eaten after dunking into very tasty coarse powdery mixture of ground chilly, salts (three or four kinds to impart taste) i.e. rock salt, black salt, common salt etc. and dried lemon juice.
It is a hot, sour and salty enjoyment mostly eaten by children and younger lot. Oldies consider it too hot to handle for their palate.
By the way try this good mango recipe from india. It can be used as a dip if sugar is less and as a sauce too. It is called Chatpat Aam(mango) Chutney
Ingredients
Raw Mango - 500 gms
Sugar - 500 gms
Raisin- 100 gm.
Dry Masala(spice powder) as below: -
Mustard seed - 1 tsp
Fennel Seeds or Saunf - 2 tsp
Methi seed, also known in English as fenugreek greens-1 tsp
Jeera (Cumin seeds) - 1 tsp
(You'll find all the ingredients in any Indian store or on ebay etc.) all fried and then powderred
Method:
1. Grate the mango and remove its water.
2. Add the sugar with mango properlly.
3. Heat a pan and add the mango and sugar mixture.
4. Cook it with a medium flame carefully.
5. When its turns soft and sticky, then add the raisin and the powdered masala. Mix it well and cool it.
6. Store it in a glass container for long. You can enjoy it with anything.
