yes and no to most of your questions.

they can be and a majority are.

The good bouncers (security) will be seen from time to time but very very seldom make a scene in the place of business. It is usually an (escort) outside or a call to the cops after they are outside. They also screen people from coming in the place . Most bouncers know each other if they are on a strip and they will inform each other of problems are headed their way.

I did security for bars/clubs when I was younger my size normally stopped a lot of stuff. 6'10 and 425 I was the doorman

My fiance' works as a bouncer.......so I guess you all ready know my answer. Yes, he is tall and muscular. No, he doesn't just keep people from entering clubs, he has to keep his eyes on EVERYONE. Make sure tense situations don't get out of control.
Physical violence is only used as a last resort.
Heck, I wouldn't want to go to a crowded club that didn't have any bouncers or any type of security. Drunks can turn into assholes real quick.

Some clubs, bouncers are a joke.. I once threw a bouncer out of his own club.Pretty funny that it made the owner mad,I just left anyway. He could only been 150 pounds soak and wet .
They are SUPPOSE to keep the club in an orderly fashion without trouble. They walk around the place, acting like somebody important.

They are the ones who "bounce" out under age people and people who get out of hand. They don't have to be big but it helps. They keep things running smoothly. They also keep people safe by keeping an eye on them. At closing some of them will stand out side and watch to make sure no one is messing with anyone. They seem like assholes cause its the job they are in.

No, they're not. Bouncers' jobs are difficult because it's their job to make sure no one gets too rowdy; and if a person gets out of control, they have to remove them from the premises. They're also the bad guy that has to say "NO" to anyone under legal age. They generally are big guys, but they need to be big because of the job they do.
