Go to a real Asain resturant or go to a themed one such as King Arthur's Table.

If you find an authentic Japanese restaurant, they have that sort of thing. I forgot what the japanese term is called, but you rely on the chef to select your menu. You just tell him what items you do not eat, and you tell him when to stop. Not only will they do that with Sushi but also with Kushiyaki.

Most gourmet restaurants can accommodate that too. You go in and tell the waiter you wish to go off their signature menu items, and this is how much you are willing to spend (unless you have no option!).
