Fettuccini with Salsa Cruda and Feta
A delicious summer pasta dish.
Original recipe yield: 6 servings.
INGREDIENTS:
300 g fresh fettuccine pasta
3-1/4 ripe tomatoes, chopped
1/3 small red onion, chopped
2/3 cup chopped fresh basil
1/3 cup pitted kalamata olives, chopped
freshly ground black pepper to taste
1 tablespoon and 1 teaspoon extra virgin olive oil
2/3 cup crumbled feta cheese
DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
In a medium bowl combine tomatoes, onion, basil, olives and black pepper.
Toss the fettuccini with olive oil. Serve pasta topped with tomato mixture and feta cheese.
Baked Corn
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

You may also want to check your local organic or whole foods store for Gardenburger brand veggie burgers. They have a black bean burger that is AWESOME. My roomie who is very much the meat eater even likes them, and they're super easy. Even those of your guests that prefer meat will be pleased. Top it with some dijon mustard, cheese, and a slice of fresh tomato and you're set. (Yeah, I know it's not "cooking", but sometimes I'm just too tired to actually prepare a whole meal)

Tomato Salad
2 tomatos seeded and chopped
1.5 cucumbers, cut in half and sliced
green or regular onions
1 tub sour cream
Mix all and chill, this is really good.
Mix lima beans and butter beans and chick peas and add italian salad dressing and chill it for a few hours, it is really good. (Make sure you drain the beans before adding the salad dressing.) You could also add celery and carrots to this or any vegetables that you want. Serve on a bed of lettuce.

Salads are the most delicious veggie meals to eat (my opinion) and they're really easy to do. My recipe: Just grab some cucumbers, tomatoes, lettuce, onions and put them into a bowl. Add salt, oil and vinegar and it's ready !
