Italians do not eat monstrous plates of pasta swimming in fatty sauce... only we unhealthy Americans are foolish enough to do that. A typical Italian dinner might start with a minestra (soup) and/or SMALL plate (i.e., about a 1 cup serving) of light pasta dressed in olive oil and garlic with some fresh tomatoes and herbs and vegetables or a light marinara, then a small portion of roasted chicken or veal or a seafood dish, finish with a simple salad of greens with olive oil and a splash of vinegar, then cheese and/or fruit for dessert with their evening coffee.
