when I cook goat a I use a pressure cooker for the meat with a small bit of the curry to get it nice & tender then I skimp off the excess grease that always comes to the top before I add my oinions potatos and spinners (small dumpling) and additional curry & other seasonings. (thyme...ect)

The original recipe is not greasy at all. You should only use enough olive oil to make a very thin layer on your pan or skillet. Then at high temp / fire seal the goat meat, so it seem slightly brown on the outside but still raw in the inside…. And curry and cook until ready. If you need more sauce, use vegetable broth or gout broth (made with leftovers of the meat goat you’re cooking like bones and unusable meat); if you add union you will obtain more sauce. Be generous with your curry, and remember it’s a long-term stew an time is decisive to obtain plenty of curry flavored sauce. However the levels of fat should be low, even though you used olive oil.

In case you need to keep fat level as low as possible, you will have to boil your goat meat for approximately 8 minutes, or enough time so it can let some fat out into the water. But this will make it less tasty. Still, it is very helpful to keep fat levels low. If you apply this procedure, you stewing time should be less.
