I invited a couple of my friends over to visit, and I would like some ideas on what to serve.

I don't want plain o'l sandwiches, salads, and baked potatoes even w/ the topping sounds boring.


I am making individual red velvet cakes w/ cream cheese icing.. because I have the pan that I never use! I am also making a mayo/sourcream based dip that has a shrimp type flavor,,(it is new orleans mix that I bought from a Kitchen store)
I could have strawberries or fruit//but this is just going to be a small meal.

What about :
Taco Salad?
Layered Mexican dip?

Any ideas will be considered....loll.

Not pizza/ great idea/ but wanted something a little different.

And,, easy! I don't want to be in the kitchen all morning,, i want to be relaxed.

Thai Cashew Chicken. I make it frequently and it's always a hit

Wash and cut chicken into bite-size pieces. Dry with paper towel. Brown in a frying pan with olive oil until it's almost done.

Add a little more olive oil and then put in one teaspoon of fresh chopped garlic.

Add a small amount of chopped chili pepper - not too much the dish will be too hot.

Add the cashews. You are browning all this off to the side of the pan in the fresh olive oil so push the chicken to the side of the pan.

Add some chopped onion.

Add a cup of fresh broccoli

Stir everything and add a little more olive oil and cook for a few minutes. Don't overcook the broccoli.

At the end add several splashes of soy sauce but don't overdo it!

Serve over Jasmine Thai rice and enjoy, your friends certainly will too.

How about something that will really impress them like one of these dishes:

1. Individual asparagus quiches with a green salad on the side.

2. Avocado halves stuffed with a crab louis salad.

3. A curried chicken salad made with fresh pineapple and almonds, served inside half a hollowed-out pineapple.

Use good quality fresh organic ingredients and spend a little time on presentation, and anything you serve them will turn out just fine.

You can use cookie cutters to cut out little finger sandwiches. Offer a choice like tuna salad or ham salad, or you can even cook up some bacon to make clubs. I usually do a spread of finger sandwiches, ring bologna & sharp cheese with crackers, a pickle/olive tray, veggies & dip, and something with a bit of sweetness to it like trail mix.

I've also made banana bread, then used a teddy bear cookie cutter on each slice. When the "banana bread bear" is cut out, use mini chocolate chips for the eyes, add buttons if you want. You could also substitute zucchini bread, and use raisins for the eyes.

Also, one of our favorites when my friends and I get together are fruit smoothies or lattes!

You can go ahead and make the sandwhiches but make them fancy. Order custom made bread from you grocery store. Have them dye the bread any color of your choice. Get a flower shaped cookie cutter and cut the bread in flower shapes. Also get a small round cookie cutter and cut a hole in the middle and switch the colored holeds to add accent to your flowers. I usually fill the sandwhiches with chicken salad, egg salad, or fill with cucumber, cream cheese, basil & tomoto. Mmm
Serve with your side dishes, and Ice Tea and Ice Water.

Best to serve the tea & water out of crystal pitchers. It keeps it cold and fresh tasting. Have fun!

Gawd now I want to have a luncheon. I love entertaining!

BTW: If your desperate and the store wont dye the bread, look for rich looking colors in the bread isle.

Sometimes you can find lunch ideas online or in a cook book. But i think you should serve maybe something like a fruit platter, but make it into a tower. Its unique :D (saw it in a cook book too ) Just, make sure you do a good job with the stacking..

i know a good recipe for taco dip! all you do is take a brick of cream cheese, a big dollup of sour cream, and a packet of that McCormick's taco seasoning, and then you mix all that together and spread it out on a big plate and then you put on some tomatoes you chopped up, and then some green onion bottoms and then you cover the top with cheese and it is DELICIOUS!!!!!

How about a big bowl of hearty chicken soup! or Beef with slices of cheese toastettes OR I am such a seafood lover, make some shrimp scampi (cold!) jambalaya, or some other creole dish.

what about chicken quesadillas:
flatbread (you can neat flavors)
grilled chicken
cut up veggies of choice(peppers, mushrooms, green/white onion, tomato etc.)
cheese

put fixins on one side of flatbread - flod over and grill in fry pan for a few minutes.

Serve with sour cream and salsa
I sometimes spreas flatbread with chive cream cheese
