I'm trying to find something on the history of serving cheese as a dessert, but for now, here are some guidelines for cheese and wine pairings.

Matching food and wine is one of most difficult and subjective things to get right. Using up the bottle of red with a cheese selection may seem an easy option but is seldom successful. With the variety of cheeses almost matching that of wines a little planning is necessary ...Does a red go well with cheese? Not from my findings. It appears white wine comes out on top with Sauvignon Blanc the most frequently mentioned grape type.
Cheese and champagne are a classic combination. You don't normally want to eat a whole meal with champagne - you want to savor the fine wine and enjoy its texture and flavor. Cheese is a good thing to nibble at while you do so - to complement the flavor.

I think it is an Italian thing, I remember getting apples and cheese after a meal at a Italian restaurant once.

I think it was during the middle ages, that people gave cheese and pieces of bread to less fortunate people. They threw old bread or cheese to their dogs and patrons threw cheese to their slaves. So the slaves ate it after the meal of the patron. In the 6th to 16th Century.

Now ofcourse we don't have slaves anymore and just keep the bread and cheese to ourselves. well anyway, you do, cause here in Germany it's not that common.

I think thta's the history though, I am not entirely sure. (sorry for bad spelling)
