3 cups Spaghetti Sauce
1 cup Mozzarella,Shredded
2 T Olive Oil

Brush veggies with olive oil. Grill or pan fry until soft. Spray a 9x13 baking dish with non stick spray. Spoon enough sauce in the bottom to cover. Layer veggies adding sauce every couple layers. Finish with sauce and then cheese. Bake at 400 until hot through and cheese is browned.

This came from www.allrecipes.com it is very similar to the one I make I just don't have my recipe handy. I use fresh veggies or frozen instead of canned veggies

Mixed Vegetable Casserole
2 (15 ounce) cans mixed vegetables, drained
1 small onion, diced
1 (10.75 ounce) can condensed cream of chicken soup
1 cup mayonnaise
1 cup shredded white Cheddar cheese
36 buttery round crackers, crushed

Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl combine the mixed vegetables, onion, soup, mayonnaise and cheese. Mix well and spread mixture into a 9x13 inch baking dish. Top with the cracker crumbs.
Bake about 30 minutes, or until browned and bubbly.

Baked Corn

INGREDIENTS:

2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.


Cauliflower and Carrot Casserole

This is a great side-dish. Carrots and cauliflower are baked in a zesty hollandaise sauce. It may seem complicated but its very easy, as long as you have a blender. Very creamy and zippy!! Not to mention DELICIOUS!

INGREDIENTS:
1 head cauliflower, broken into small florets
4 medium carrots, peeled and diagonally sliced
3 egg yolk
1/4 teaspoon salt
2 tablespoons lemon juice
1 dash hot pepper sauce (e.g. Tabasco™)
1/2 cup butter, melted
3/4 cup coarsely crushed buttery round crackers
1 tablespoon butter, melted

DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C).
Bring about 2 inches of water to a boil in a large pot. Add cauliflower and carrots, and boil for about 7 minutes, until fork tender. Drain well, and transfer to a 9x13 inch baking dish.
While the vegetables are cooking, combine the egg yolks, salt, lemon juice and hot pepper sauce in a blender or food processor. Blend for a few seconds to mix, then continue to blend while slowly pouring in 1/2 cup of hot melted butter. Continue blending until thickened. Pour this sauce over the vegetables in the baking dish. Stir together the cracker crumbs and remaining butter; sprinkle over the top of the casserole.
Bake for 20 minutes in the preheated oven, or until the casserole is bubbling, and the top is toasted. Let cool slightly before serving.

One bag of frozen broc, carrot cauli mix, partially thawed
1 8 ounce tub of sour cream
1/2 can of cream of anything soup
1 8 ounce bag shredded swiss cheese
Durkee Onions

Mix everything but the onions and bake at 350 for 30 minutes, add onions and bake about 10 minutes more.
