I eat whole grain cereal with milk. I am not a vegan. Vegans could use soy milk. I also eat fresh fruit with my cereal. . .lots of strawberries and blueberries and bananas.
If you are not vegan, you can eat eggs: make a frittata with veggies in it, or just eat them scrambled etc.
You can get vegetarian sausage- Morning Star Farms makes a good "sausage pattie".

Scrambled tofu on toast is my favourite. I use soft tofu, mash and fry it lightly with a little bit of soy sauce, it's a great way to start the day. Plenty of protein too. I spread the toast with a fresh avocado, not butter or margarine.

One of the hardest things to do on a vegitarian diet is to get your required protien (about 80+ grams a day to do this I use a high protien cereal such as Special K with added protein with soy milk and added soy protien powder ( I add some sugar for flavor) this starts my day with a good head start on my protein needs. for varity I sometimes add blueberries or strawberries.

I have cereal with yogurt. A glass of fruit juice and a cup of coffee (quite strong and black)

tofu scrambler (tastes just like scrambled eggs) with toast.
soy yogurt with blueberries and granola.
(no dairy or eggs because i'm vegan.)
