Different varieties of Spinach are available in India. Hence, there is a separate style of cooking for just spinach. Though all of those varieties are not available here, in the USA, the following recipes work just fine when used on the spinach available here.
Molai Keerai kootu
Menthiya Keerai masiyal (using methi leaves)
Keerai Kuzhambu
Paalak Keerai masala
Keeraithandu masiyal (using the stem of spinach)
Keerai as a sidedish
Keerai is the Tamil word for spinach. The prefixes used above are just the names of the different types of spinach used for the respective dishes.
