Kelp, like most sea vegetables, contains iodine. Depending on who you talk to, iodine is either a necessary beneficial supplement for thyroid health, or a poisonous toxin to be avoided at all costs.
Because iodine comes from the sea, the only real sources of it naturally are sea vegetables, and soil that was once under salt water. Thus, crops grown in coastal regions can have a modicum of iodine, I have heard.
As to why the models take kelp instead of just iodine-added table salt, I would imagine it is because it is less processed and they can have more of it without overdosing on sodium. I don't know if it's safe to spam your thyroid with iodine though. You should probably ask a nutritionist or other health professional.
