Ra in old town Scottsdale is a good sushi restaurant, and there a few interesting cultural-type activities, including the Scottsdale art walk and various wine tasting activities, but in general I'm afraid you're going to notice a bit of a cultural downsizing from NYC. A nice way to spend the evening is on the patio bar at the Phoenician by the fire pits: you get a very nice view of the valley, and the sunsets are amazing. Also, the Phoenix zoo has a lot of interesting member activities, as does the Symphony. For a more Greenwich Village feel, I recommend the First Friday art walk on Grand Avenue, first Friday evening of every month, or Mill Avenue in Tempe (Rula Bula is a fantastic Irish Pub on Mill, and they frequently have Irish bands).

I think one of the coolest things to do in Scottsdale is to visit Rawhide. Rawhide is an authentic 1800's town, complete with romantic stage coach riding, wild west shootouts and you can have your friend locked up or pan for gold and explore a mine or cave or do some rock climbing. And if you want a place to get some really good food and do some unique souvineir shopping, visit The Horny Toad in Cave Creek (about 10 miles north of Scottsdale). Here's their website: http://www.thehornytoad.com/
