MAKE your cake VEGAN please- ! (It will taste the same or even better, if the cook knows what they are doing, but that’s why you get a professional. The Flaxseed method makes for a GOOD egg replace in cakes that are still yummy in moisture, if you don’t care about how moist it is then you cold just use “Egg Replace” which has roots of some odd plant I forget the name of, I don’t care for it because it makes it dryer).
Why, b/c we HATE missing out on the good stuff when WE know there’s substitutes that people who cared to think about us would USE!
I would of never turned Vegan if there wasn’t any vegan ice cream (and good tasting ones at that). Yes, my sweet tooth is HUGE.
Anything that is meat or dairy CAN be substituted for Vegans…
There is a Vegan version of Salmon (go buy it, too hard to make from scratch). It tastes more like Tuna to me then Salmon though, but it is togher.
Treat them with the same food, just make it Vegan, they’ll love you FOREVER! (because you’re paying for it LOL, Vegan Salmon is a luxury, it’s like $5 for one box at "Earth Fare"). It is always a treat to me to eat like everyone else around me but MINE is still Vegan LOL.

Avocado with Raspberry Vinaigrette
This makes a great starter for four people, so you can double it for the 8
Ingredients
1 avocado
300g tin of raspberries in juice
3 tsp sugar
1 tsp white wine vinegar
Notes
If your raspberries have come in syrup rather than juice use 1 tsp sugar instead.
Method
Drain the raspberries, reserving 3 tbsp of the juice. Add the sugar to the raspberries and reserved juice and whizz in a blender. Now push the mixture through a sieve to get rid of the pips. Put into a small saucepan, bring to the boil and boil for 1 minute. Leave to cool.
Just before serving, peel the avocado, remove the stone and cut into slices. Mix the cider vinegar into the raspberry mixture and spoon onto plates. Arrange slices of the avocado in a fan on the vinaigrette and serve. Yum!

Walnut bleu cheese-stuffed mushrooms Ingredients 2 lbs. [about 40] fresh whole mushrooms 1 8 ounce container soft cream cheese with chives and onions 2 Tablespoons chopped walnuts 2 Tablespoons bleu cheese, crumbled 1/4 teaspoon dried basil chopped fresh flat leaf parsley, for garnish Method Heat oven to 350 degrees. Clean mushrooms. Remove stems and discard [or save for another use]. Place mushrooms in an ungreased 15 x 10 x 1-inch baking dish, stem side up. Combine remaining ingredients, except parsley, in a medium bowl. Mix well. Spoon about 1 teaspoon of mixture into each mushroom cap. Bake for 15 to 20 minutes or until thoroughly heated through. Garnish with parsley. Makes 40 mushrooms. Can be made up to 12 hours ahead.

How about a dish with mushrooms? This is somewhat similar to salmon in a way (though I would choose salmon since I'm not veggie, mushrroms are delicious too)
In Italian restaurants they often have a lovely starter with mushrooms....or you could try a vegetarian pate - for example spinach roulade?

My wife's family is vegetarian and Indian and we had an Indian starter which was tasty and different. I am talking traditional Indian food and not the standard takeaway menu you see in Indian restuarants. We live near London and there are quite a few family run companies that can cook Indian food and deliver it to wherever you need it that is traditional and nice.
Chapati's and dall is quite nice as a starter as long as it is prepared properly. Dall is a version of a thick Indian soup. All vegetarian.

How about Hummus and Peta Bread. It's really good. Just buy some hummus, mix in a few herbs (powtered) serve it with some peta bread toasted in olive oil. Serve it with some black olives and peperochini peppers to for some added flavor. Hope this helped.

I would seriously consult with them. I'm vegetarian and would be very happy if I was asked what I would like....rather than the choices made for me. I agree with one of the answerers above me though about serving bruschetta! How about mushrooms stuffed with bread crumbs and diced and cooked onions, red peppers and herbs? make sure it's cooked with olive oil and not butter (for the vegans)...also make sure there's no cheese in the stuffing.

i always love rocket salad with goats cheese (cover in crushed peppercorns and/or breadcrumbs), garlic croutons, red onion marmelade and either toasted pistachios or walnuts. mmmm! sometimes i have sun dried tomatoes and black olives in it
...but the vegans might appreciate some quinoa or tofu cut up really small and treated the same way as the cheese. Nightmare awkward eaters-don't forget its your wedding- i would be happier going hungry than adding to my friend's wedding stress! congratulations!

Ideas: Mini brushetta selection, Soup, baked camembert with cranberry or raspberry coulis, a single large baked mushroom with either vegan or normal cheese on top, baked single pepper stuffed with rice salad and dressing, crudites and dips..!

I am a vegetarian and i like things like mushrooms in some kind of sauce mainly cheese, in something like a filo parcel or basket, sprinkled with fresh herbs and roasted pine nuts
