I love raw zucchini it tastes sweeter than when its cooked.
I grate mine up and eat in salads but you can eat it with dip

Yes, I like raw zucchini. I only tend to eat it in these packs of veggies that my school sells, which comes with carrots, broccoli, celery, red pepper, and cucumber. I always eat the zucchini last, and the whole thing comes with a light ranch dip.

I eat it cut up in salads, with dips, by itself. However, I grow my own and harvest it just before eating it. It is sweeter that way. the zucchini in the stores is often old and, just as corn gets starchy when it sits around too long, so does zucchini lose its flavor and may even become bitter if it is not fresh.

I've cooked some thin slices of zucchini really quick before in olive oil and then ate it cold in a sandwich with roasted red peppers (from a jar) and other veggies. It was scrumptious......I suppose you could just blanche it cut up to take the bitterness away....make sure you submerge it in ice water after you blanche it for about 1 minute.

If I can get it young and tender, yes! Once they get past about 6-8 inches long the skin starts to get bitter.
I like yellow summer squash better.

It is nice with tomato sauce and lemon juice, It is not at all unusual to eat it raw, you can grate it into coleslaw with grated carrot, apple and cheese.
