Your in a dilemma. If its just burger then steak cut small will replace it in recipes but if it's that he's going vegetarian then you have to look into TVP and meat replacement like beans. Also Portabello mushrooms give many vegetarian dishes a beefy flavor.
Here's a veggie burger substitute but the store bought may be better tasting to you guys. Try morning star brand I've had 'em and with enough ketchup.....
Veggie Burger
1 (15 ounce) can kidney beans, drained,and rinsed
1/2 cup rolled oats
1/2 cup mushrooms, finely chopped
1/4 cup onions, finely chopped
1 carrot, shredded
1/2 cup red bell peppers, chopped
1 clove garlic, minced
2 tablespoons tomato paste or ketchup
1/2 teaspoon salt
pepper, to taste
4 patties
20 minutes 5 Min's prep
Throw all ingredients in food processor (or blender, if you don't have one).
Pulse (or blend) until coarsely chopped.
Chill mixture, then shape into four (4) 1/2-inch thick patties.
Now you can wrap and freeze them for later.
To cook, thaw patties in microwave, then broil 4-6 inches from heat for 10 to 15 minutes (or until warm in the middle).
You can do this in your broiler.
Serve like you do your favorite meat patties!

A big slab of marinated tempeh works well.
Or you can get any vegetarian meal leftovers, mash it with some wheat flower, white beans and mashed potato to bind into patties and then shallow fry to make tasty burgers. You need to add lots of salt and pepper onions and garlic to give it any taste though.
Don't buy tvp and mock meat. It's highly processed crap and probably worse for you than meat. Just 'cos its vegetarian doesn't make it good. Cyanide is vegetarian as is strychnine.

There is a product by Morningstar Farms (Meal Starters: Grillers Recipe Crumbles) that is a good subsitute for ground beef. Great for tacos, lasagna and the sort. For burgers, protobello mushrooms or good ol gardenburgers are great.

Veggie burgers are easily intense protein stuffing. Bread crumbs, flour or rice + mashed beans, or TVP + chopped vegetables + egg or egg replacer. Spice on your liking. TVP stands for textured vegetable protein. it particularly is a soy product used in maximum commercial veggie burgers. All wellness food shops carry it.

try turkeyburger, yes it is ground turkey meat, it does have less fat too, if i remember correctly
